For the whole month of August until September from noon to 10 pm daily, Seda Atria’s Chef de Partie and Champion of the Elite Chef Challenge 2016, Albert Ledesma, will whip up his winning Seafood Laksa of vermicelli (rice noodles) cooked to perfection with a Singaporean twist.
At a filling Php200 nett, Chef Albert’s Singaporean-style Seafood Laksa has the flavorful soup base of coconut cream and laksa paste balanced with subtle spices and ingredients such as coriander, chilies, lemongrass, and lime juice. This gastronomic experience comes with excellent service that keeps Misto regulars coming back.
“There are many ways of preparing laksa which is basically a Malaysian-Chinese noodle soup, but in my case, I sauté the laksa paste with a little oil to deepen the flavor and enhance the aroma before I add the stock and the coconut cream,” says Chef Albert as he lets on the “secret” that made him champion in the Elite Chef Challenge held recently in Iloilo City that saw around 13 chefs from different restaurants and hotels in Western Visayas competing with each
His ten years of training as a chef preparing dishes for discerning palates, his experience of concocting Italian dishes from working in fine-dining Italian restaurants abroad, as well as his recent victory at the Elite Chef Challenge make Albert Ledesma the chef to watch.
“Cooking has always been my passion and I am glad that Seda Atria has given me the opportunity to grow as a chef,” says Chef Albert who has worked at various hotels and restaurants in the Middle East before recently returning to his native Jaro District here in Iloilo City.
